A blend of Chardonnay and Sauvignon Blanc, the Sottocastello Bianco opens to aromas of dried peach, orchard fruit, smoke, white licorice and even a touch of dried mint. The aromas are presented with intensity, giving this wine a shifting and fluid bouquet that changes with each swirl of the glass. It shows a lean, mid-weight texture with lasting honey, calling out for a plate of pan-seared flounder or sole.
