The 2007 The Maitre D’ Cabernet Sauvignon is opaque purple-colored with legs that slowly ooze down the glass. It received the same elevage as The Scooter. It reveals an enticing nose of spice box, scorched earth, smoke, black currant, and blackberry followed by a velvety-textured, layered, savory Cabernet with excellent depth and balance. This lengthy effort will evolve for 1-2 years and provide pleasure through 2017. Mollydooker is the label of the renowned winemaking team of Sparky and Sarah Marquis. This is their third vintage, one seriously affected by the drought conditions in Barossa and McLaren Vale. Their overall production was down by 50% in 2007.
