Pavelot's 2006 Savigny-les-Beaune La Dominode is predictably their most concentrated wine of the vintage, though it is also tartly red-fruited, deeply meaty, slightly bitterly herbal and dark chocolate-tinged, as well as chalky, making for a rather somber overall impression. This lacks the fascination of the Gravains today, but should be well worth following for 5-6 years at least. It should be interesting to follow its evolution for at least 3-4 years. Hugues and Jean-Marc Pavelot – who began harvesting September 20 – approached the fruits of this vintage with caution and were in most instances very restrained in promoting fermentative extraction. The results are mixed, but in the best instances their approach has paid off in charming, youthfully satisfying wines.
