The outstanding 1991 Cabernet Sauvignon reveals an opaque purple color, a spicy, rich, cassis-scented nose, full body, tremendous density, that chewy unctuosity that winemaker George Bursick routinely obtains in so many wines, and a soft, moderately tannic finish. It should drink well for 10-15 years. The herbaceousness that plagued the Cabernet Sauvignons is no longer present as Ferrari-Carano has begun to manage its vineyards in a manner that minimizes the vegetal aromas and flavors.
